With St Patty's approaching, I think it would be very appropriate to throw a fun party.
I also think that while coloring everything green is fun, having a bright rainbow range on the table with the touch of fresh green herbs on each ( whether as decoration or a part of a recipe itself) is even better!
There are many fun recipes out there. I absolutely LOVE this a-typical gnocci recipe! And with basil?! I think that with the side of heirloom tomatoes ( prepped with some garlic, truffle salt, dill and honey vinegar) and roasted yellow and orange peppers sprinkles with green onions and a dash of coconut oil , this would just be that end of the rainbow where all leprechauns would want to hide their gold.
Ricotta Gnocci
1 qt bullion of your choice
2 large eggs
1lb fresh ricotta
1lb spinach leaves
8 Tbsp flour
2 oz parmesan
nutmeg, black pepper , salt - to taste
sause :
fresh ( preferably raw) butter, basil, garlic, salt.
Preparation:
Lightly steam spinach leaves, let cool, chop
In a mixing bowl combine spinach with ricotta, eggs, Parmesan, sifted flour. Add salt , pepper and nutmeg. Mix well.
Bring bullion to boil. Make little balls out of the dough ( about the size of a walnut ) , boil for about 10-15 minutes.
Sause :
In a separate skillet melt the butter, add crushed garlic , basil and salt. Don't over cook - just let the flavors blend well. Pout over gnocci and serve!
